    In a medium bowl, whisk together the peanut butter, soy sauce, lime juice, and Sriracha. Set aside.

    In a large skillet, heat olive oil over medium heat. Add minced garlic and grated ginger, sautéing for 1 minute until fragrant.

    Add the baby corn, mushrooms, and red bell pepper to the skillet. Cook for 5-7 minutes until the vegetables are tender.
