Prepare the Ribs

Preheat the oven to 300°F (150°C). Season the pork ribs with salt and black pepper on both sides. Place them on a baking sheet and cover with aluminum foil.

Make the Tamarind BBQ Sauce

In a saucepan, combine tamarind paste, brown sugar, soy sauce, honey, minced garlic, minced ginger, cayenne pepper, and apple cider vinegar. Cook over medium heat, stirring until the mixture thickens, about 10 minutes.

Bake the Ribs

Bake the covered ribs in the preheated oven for 2.5 hours, until they are tender.

Glaze the Ribs

Remove the ribs from the oven and increase the temperature to 400°F (200°C). Brush the tamarind BBQ sauce generously over the ribs and return them to the oven, uncovered, for an additional 20-30 minutes, until the sauce is caramelized.

Serve

Remove from oven and let the ribs rest for 10 minutes. Slice and serve garnished with sliced radish and chopped cilantro.
