Country Bread

Prepare the Dough

In a large bowl, mix the bread flour, yeast, and salt. Gradually add water and mix until a shaggy dough forms.

Knead the Dough

Turn the dough onto a floured surface and knead for about 10 minutes until smooth and elastic.

First Rise

Place the dough in a greased bowl, cover with a damp cloth, and let it rise for 1-2 hours until doubled in size.

Shape and Second Rise

Punch down the dough, shape it into a loaf, and let it rise again for another 30-45 minutes.

Bake

Preheat the oven to 450°F (230°C). Bake the loaf for 25-30 minutes until golden brown.

Olive Loaf

Prepare the Dough

In a mixing bowl, combine the flour, yeast, and salt. Slowly mix in the warm water until a dough forms.

Incorporate Olives

Knead the dough for about 5 minutes, then gently fold in the chopped olives.

First Rise

Cover the bowl with a damp cloth and let the dough rise for about an hour until it doubles in size.

Shape and Second Rise

Shape the dough into a loaf and let it rise for another 30 minutes.

Bake

Preheat the oven to 375°F (190°C) and bake for 30-35 minutes until golden and hollow-sounding.

Porridge

Cook the Oats

In a saucepan, combine rolled oats, water or milk, and salt. Bring to a boil, then reduce heat and simmer for about 5 minutes.

Sweeten

Remove from heat and stir in honey or maple syrup to taste. Serve warm.
