Preparation Instructions

  1. 1

    Prepare Brussels Sprouts

Preheat the oven to 400°F (200°C). Trim and halve the Brussels sprouts, then toss them in a bowl with olive oil, salt, and black pepper until evenly coated.

  2. 2

    Roast Brussels Sprouts

Spread the Brussels sprouts in a single layer on a baking sheet. Roast in the preheated oven for 20-25 minutes, or until crispy and golden brown, tossing halfway through.

  3. 3

    Toast Cashews

While the Brussels sprouts are roasting, heat a small skillet over medium heat. Add cashews and toast them for 5-7 minutes, stirring frequently, until golden and fragrant. Remove from heat and set aside.

  4. 4

    Make Lemon Miso Sauce

In a small bowl, whisk together lemon juice, miso paste, minced garlic, and water until smooth and creamy.

  5. 5

    Combine and Serve

Once the Brussels sprouts are done roasting, remove them from the oven and toss them in the lemon miso sauce. Top with toasted cashews and serve immediately.
