Hummus Preparation
Blend the Ingredients
In a food processor, combine the chickpeas, tahini, minced garlic, lemon juice, olive oil, ground cumin, and salt. Blend until the mixture is smooth.
Adjust Consistency
If the hummus is too thick, add water a tablespoon at a time until you reach your desired consistency. Blend again until smooth.
Taste and Adjust
Taste the hummus and adjust seasoning with more salt or lemon juice if needed.
Roasting Tomatoes
Prepare the Tomatoes
Preheat your oven to 400°F (200°C). Wash the cherry tomatoes and slice them in half.
Roast the Tomatoes
Place the halved tomatoes on a baking sheet, drizzle with olive oil, and sprinkle with salt. Roast in the preheated oven for about 15-20 minutes, or until they are blistered and slightly caramelized.
Serve the Dish
Arrange the Platter
On a serving plate, spread the hummus in the center. Top with the roasted tomatoes, sliced cucumbers, kalamata olives, and crumbled feta cheese.
Drizzle with Olive Oil
Finish by drizzling a little extra olive oil over the top for added flavor.
Serve with Pita
Serve the hummus with fresh pita bread on the side for dipping.
