Preparation

Prepare the Oysters

Preheat the oven to 375°F (190°C). Clean the oysters under cold water and carefully shuck them, leaving them on their half shells.

Bacon Cheddar Topping

Mix the Bacon Cheddar Filling

In a bowl, combine the crumbled bacon, sharp cheddar cheese, softened cream cheese, chopped green onions, garlic powder, and black pepper. Mix until well combined.

Top the Oysters

Spoon the bacon cheddar mixture onto half of the shucked oysters.

Rockefeller Topping

Prepare the Spinach Mixture

In a skillet, melt the butter over medium heat. Add minced garlic and sauté for 1 minute. Add the chopped spinach and cook until wilted. Stir in the breadcrumbs and Parmesan cheese, and add hot sauce to taste.

Top the Oysters

Spoon the spinach mixture onto the other half of the shucked oysters.

Baking

Bake the Oysters

Place the topped oysters on a baking sheet and bake in the preheated oven for 10-12 minutes, or until the toppings are bubbly and golden.

Remove from oven, let cool slightly, and serve warm as a delicious sampler.
