Prepare the Chicken (or Fish)
In a large bowl, mix flour, cornstarch, baking powder, salt, black pepper, and paprika. In another bowl, whisk together eggs and milk.

Coat the Chicken (or Fish)
Dip each piece of chicken (or fish) in the egg mixture, then dredge in the flour mixture, making sure to coat evenly.

Heat the Oil
In a large pot or deep fryer, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Chicken (or Fish)
Carefully place the coated chicken (or fish) into the hot oil and fry until golden brown and cooked through, about 5-7 minutes per side. Remove and drain on paper towels.

Prepare the Fries
While frying, cook the frozen French fries according to package instructions.

Make the Cole Slaw
In a large bowl, shred the cabbage and carrot. In a separate bowl, mix mayonnaise, apple cider vinegar, and sugar. Combine the dressing with the cabbage and carrot, and toss to coat.

Plate the crispy fried chicken (or fish) alongside the fries and cole slaw.
