Cooking Instructions
Cook the Pasta
In a large pot, bring salted water to a boil. Add cavatappi pasta and cook according to package instructions until al dente. Drain and set aside.
Prepare the Cheese Sauce
In the same pot, melt butter over medium heat. Add minced garlic and sauté until fragrant. Stir in flour and cook for 1-2 minutes to form a roux. Gradually whisk in milk, stirring constantly until the mixture thickens. Add in the shredded white cheddar cheese, salt, and pepper, stirring until smooth.
Combine Pasta and Cheese Sauce
Add the cooked cavatappi pasta and chopped asparagus to the cheese sauce, mixing well to combine. Keep warm on low heat.
Sear the Scallops and Shrimp
In a separate skillet, heat a tablespoon of truffle oil over medium-high heat. Season the scallops and shrimp with salt and pepper. Sear the scallops for about 2-3 minutes per side until golden brown, and cook the shrimp until pink and opaque, about 3-4 minutes.
Serve
Plate the white cheddar mac and cheese, and top with the seared scallops and shrimp. Drizzle with remaining truffle oil before serving.
