Preparation of Roasted Red Pepper Coulis
Blend the Coulis
In a blender, combine roasted red peppers, olive oil, garlic, lemon juice, salt, and black pepper. Blend until smooth and set aside.
Preparation of Fried Green Tomatoes
Prepare the Tomatoes
Slice the green tomatoes into 1/4 inch thick slices and season with salt and pepper.
Dredging Station
Set up a dredging station with three shallow dishes: one with flour, one with buttermilk, and one with a mixture of cornmeal, salt, black pepper, and cayenne pepper.
Coat the Tomatoes
Dip each tomato slice in flour, then buttermilk, and finally coat with the cornmeal mixture.
Fry the Tomatoes
In a large skillet, heat vegetable oil over medium-high heat. Fry the coated tomato slices until golden brown, about 3-4 minutes per side. Drain on paper towels.
Assembly
Plate the Dish
On a serving plate, drizzle the roasted red pepper coulis, place the crispy fried green tomatoes on top, and sprinkle with goat cheese crumbles and fresh parsley.
