Grilling Seafood

Prepare the Seafood

Pat the fish, shrimp, and scallops dry with paper towels. Sprinkle Old Bay seasoning evenly over all the seafood.

Preheat the Grill

Preheat your grill to medium-high heat.

Grill the Fish

Place the fish fillets on the grill and cook for 4-5 minutes per side, or until the fish flakes easily with a fork.

Grill the Shrimp and Scallops

Skewer the shrimp and scallops (if desired) and grill them for 2-3 minutes on each side until they are opaque and cooked through.

Making Beurre Blanc Sauce

Sauté the Shallots

In a saucepan, melt 1 tablespoon of butter over medium heat. Add the chopped shallots and sauté until they are translucent.

Add White Wine

Pour in the white wine and bring it to a simmer. Let it reduce by half.

Incorporate Cream

Add the heavy cream and simmer for another 5 minutes until it thickens slightly.

Finish the Sauce

Remove the saucepan from heat and whisk in the cold butter until the sauce is smooth. Season with salt and pepper to taste.
