Prepare the bacon
Cook the applewood smoked bacon in a skillet over medium heat until crispy. Remove from heat, drain on paper towels, and chop into small pieces.

Preheat the oven
Preheat your oven to 375°F (190°C).

Prepare the oyster filling
In a mixing bowl, combine the chopped bacon, shredded white cheddar cheese, finely chopped scallions, melted butter, minced garlic, and season with black pepper and salt. Mix well.

Prepare the oysters
Shuck the Gulf oysters and place them on a baking sheet. If desired, you can leave the oyster liquor in the shells.

Stuff the oysters
Spoon the bacon and cheese mixture generously onto each oyster.

Bake the oysters
Place the baking sheet in the preheated oven and bake for about 15-20 minutes, or until the cheese is melted and bubbly.
