Directions for Making Kracher Beerenauslese Cuvée

    Harvesting and Crushing Grapes

    Harvest the Riesling, Grüner Veltliner, and Late Harvest grapes during late autumn when they are botrytized. Crush the grapes gently to release their juice.

    Juicing

    Press the crushed grapes to extract the juice. Collect the juice in a sanitized fermentation vessel.

    Mixing Ingredients

    Add sugar to the grape juice and stir until completely dissolved. If using, add oak chips for aging flavor.

    Fermentation

    Sprinkle the yeast over the juice mixture and gently stir. Cover the fermentation vessel with a cloth and let it ferment in a cool, dark place for about 2 weeks, stirring daily.

    Clarification

    After fermentation, transfer the wine to a clean vessel, leaving sediment behind. Let it sit for another 2-4 weeks until it clarifies.

    Bottling

    Once clarified, siphon the wine into sterilized bottles, seal with corks, and label. Store in a cool, dark place.

    Aging

    For best results, age the wine for at least 6 months before tasting.
