Preparation of Topping

Chop Tomatoes
Dice the fresh tomatoes into small pieces and place them in a mixing bowl.

Add Basil and Garlic
Chop the fresh basil leaves and mince the garlic cloves. Add both to the bowl with the tomatoes.

Mix Ingredients
Add the balsamic vinegar, salt, and black pepper to the tomato mixture. Stir well to combine all ingredients.

Prepare Mozzarella
Cube the mozzarella cheese into small pieces and set aside.
Preparation of Bread

Preheat Oven
Preheat your oven to 400°F (200°C).

Slice Baguette
Slice the baguette into 1/2 inch thick slices.

Brush with Olive Oil
Lay the slices on a baking sheet and brush each slice lightly with olive oil.

Toast Bread
Place the baking sheet in the preheated oven and toast the bread for about 5-7 minutes, or until golden brown.
Assembly

Top the Toast
Remove the toasted bread from the oven and allow it to cool slightly. Spoon the tomato mixture generously onto each slice.

Add Mozzarella
Top each bruschetta with the cubed mozzarella cheese.

Drizzle with additional olive oil if desired, and serve immediately.
