Chop the Vegetables

Finely chop the onion, bell pepper, and garlic cloves. Set aside.

Cook the Bacon

In a large skillet over medium heat, add the bacon slices. Cook until they are crispy, about 5-7 minutes. Remove the bacon from the skillet and set aside on a paper towel to drain. Once cool, crumble into small pieces.

Sauté the Vegetables

In the same skillet with the bacon drippings, add the olive oil if needed (to prevent sticking). Add the chopped onion and bell pepper. Sauté for about 3-4 minutes until softened. Add the minced garlic and cook for an additional 1 minute until fragrant.

Add the Beans and Seasonings

Drain and rinse the black beans. Add them to the skillet along with cumin, chili powder, salt, and black pepper. Stir well to combine and heat through for about 5 minutes.

Combine with Bacon

Add the crumbled bacon to the skillet, stirring to incorporate. Cook for an additional 2-3 minutes to allow the flavors to meld.

Remove from heat and serve warm. Enjoy as a side dish or as a filling for tacos or burritos.
