    Prepare the Chicken Wings

    Rinse the jumbo chicken wings under cold water and pat them dry with paper towels. In a large bowl, combine salt, black pepper, garlic powder, and paprika. Add the chicken wings to the bowl and drizzle with olive oil. Toss well to ensure all wings are evenly coated with the seasoning.

Smoking

    Slow Smoke the Wings

    Preheat your smoker to 225°F (107°C). Place the seasoned wings on the smoker rack, making sure they are not overcrowded. Smoke the wings for approximately 1.5 hours or until they reach an internal temperature of 165°F (74°C).

Frying

    Fry the Wings

    Heat a deep fryer or a large pot with oil to 375°F (190°C). Once the oil is hot, carefully add the smoked wings in batches. Fry the wings for about 4-5 minutes until they are golden brown and crispy. Remove them from the oil and place them on a paper towel-lined plate to drain excess oil.

Saucing

    Toss in Sauce

    In a large mixing bowl, add the fried wings and your choice of sauce (Buffalo, BBQ, Teriyaki, or Garlic Parmesan). Toss the wings until they are well coated in the sauce. If you prefer your wings naked, skip this step.
