Method
Preparation of Black Beans
- 1
Prepare the Black Beans
In a small saucepan, combine the canned black beans, ground cumin, and salt. Heat over medium heat until warmed through, about 5 minutes. Stir occasionally to ensure the beans don't stick to the bottom.
Preparation of Pico-de-Gallo
- 2
Make the Pico-de-Gallo
In a mixing bowl, combine the diced tomatoes, red onion, chopped cilantro, lime juice, and salt. Stir well to combine and set aside to let the flavors meld for about 10 minutes.
Assembling the Nachos
- 3
Layer the Nachos
Preheat your oven to 350°F (175°C). On a large baking sheet, spread out the tortilla chips in an even layer. Evenly distribute the prepared black beans over the chips.
- 4
Add Cheese
Sprinkle the shredded Cheddar and Jack cheese evenly over the black beans and tortilla chips.
- 5
Bake the Nachos
Place the baking sheet in the preheated oven and bake for 10-15 minutes, or until the cheese is melted and bubbly.
Serving
- 6
Serve the Nachos
Remove the nachos from the oven and top with the prepared Pico-de-Gallo, dollops of sour cream, and sliced green onions. Serve immediately while hot.
