Method

Crust Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 350°F (175°C).

  2. 2

    Mix Crust Ingredients

In a medium bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Stir until the mixture resembles wet sand.

  3. 3

    Form the Crust

Press the crumb mixture firmly into the bottom of a 9-inch springform pan to form an even layer. Use your fingers or the back of a measuring cup for an even surface.

  4. 4

    Bake the Crust

Bake the crust in the preheated oven for about 10 minutes, until lightly golden. Remove from oven and let cool.

Filling Preparation

  1. 5

    Prepare the Cream Cheese

In a large mixing bowl, beat the softened cream cheese with an electric mixer on medium speed until creamy and smooth, about 2-3 minutes.

  2. 6

    Add Sugar and Sour Cream

Gradually add granulated sugar and sour cream to the cream cheese, continuing to beat until well combined.

  3. 7

    Incorporate Vanilla and Eggs

Add vanilla extract and one egg at a time, mixing well after each addition to ensure smoothness.

  4. 8

Mix in Flour and Lemon Juice

Add flour and lemon juice, mixing on low speed until just combined. Be careful not to overmix.

Baking the Cheesecake

  1. 9

    Pour Filling into Crust

Carefully pour the cheesecake filling over the cooled crust, spreading it evenly.

  2. 10

    Bake the Cheesecake

Bake in the preheated oven for 50-60 minutes, or until the center is set but slightly jiggly.

  3. 11

    Cool the Cheesecake

Turn off the oven and crack the door open. Let the cheesecake cool in the oven for about 1 hour, then remove and cool at room temperature.

  4. 12

    Chill in the Refrigerator

Once cooled, cover the cheesecake with plastic wrap and refrigerate for at least 4 hours or overnight for best results.

Topping (optional)

  1. 13

    Prepare the Topping

Just before serving, wash and pat dry the fresh berries.

  2. 14

    Dust with Powdered Sugar

In a small bowl, mix fresh berries with powdered sugar, and let sit for about 10 minutes to create a syrup.

  3. 15

    Serve

Slice the chilled cheesecake, and top with the sweetened berries if desired.
