In a large bowl, mix the salt, black pepper, brown sugar, garlic powder, onion powder, and smoked paprika. Rub the mixture all over the fresh ham ensuring it is evenly coated.

Place the coated ham in a large zip-top bag or container, and pour in the water. Seal or cover the container, and refrigerate for at least 12 hours, preferably 24 hours.

Preheat your oven to 160°C (320°F).

Remove the ham from the brine, pat it dry with paper towels, and place it on a roasting rack in a baking dish. Bake in the preheated oven for approximately 2 to 2.5 hours, or until the internal temperature reaches 70°C (160°F).

Once cooked, remove the ham from the oven and let it rest for 30 minutes before shaving.
