For Poached Salmon

For Poaching the Salmon

    Prepare Poaching Liquid

    In a large pot, combine the water, white wine, lemon slices, dill, salt, and black pepper. Bring to a simmer over medium heat.

    Poach the Salmon

    Once the liquid is simmering, carefully add the salmon fillets skin-side down. Cover the pot and let the salmon poach for 10-12 minutes, or until it is cooked through and flakes easily with a fork.

    Serve

    Remove the salmon from the pot and serve immediately with your choice of sides or garnish with additional dill and lemon slices.

For Blackening the Salmon

    Prepare Spice Mixture

    In a small bowl, mix together the paprika, cayenne pepper, garlic powder, onion powder, thyme, salt, and black pepper.

    Coat the Salmon

    Rub the spice mixture generously over the salmon fillets on both sides.

    Heat the Pan

    In a skillet, heat the olive oil over medium-high heat until it is shimmering.

    Blacken the Salmon

    Add the salmon fillets to the hot skillet and cook for 3-4 minutes on each side, or until a dark crust forms and the salmon is cooked through.

    Serve

    Remove the salmon from the skillet and serve immediately with your choice of sides.
