Crust Preparation

Make the Dough
In a large bowl, mix the flour, sugar, and salt together. Add the chilled butter and use a pastry blender or your fingers to cut it into the flour until the mixture resembles coarse crumbs.

Add Ice Water
Gradually add ice water, one tablespoon at a time, mixing gently with a fork until the dough comes together. You may not need all the water.

Chill the Dough
Shape the dough into a disk, wrap in plastic wrap, and refrigerate for at least 1 hour.
Filling Preparation

Prepare the Fruit
Wash and slice the fresh seasonal fruit into bite-sized pieces. Place them in a large mixing bowl.

Mix the Filling
Add brown sugar, cornstarch, cinnamon, lemon juice, and vanilla extract to the fruit. Toss gently until the fruit is evenly coated.
Assemble and Bake the Pie

Preheat the Oven
Preheat your oven to 375°F (190°C).

Roll Out the Dough
On a floured surface, roll out the chilled dough into a circle large enough to fit your pie dish. Transfer the dough to the dish and trim the edges.

Add the Filling
Pour the prepared fruit filling into the pie crust, spreading it evenly.

Bake the Pie
Bake in the preheated oven for 45-50 minutes, or until the crust is golden brown and the filling is bubbly.

Allow the pie to cool for at least 15 minutes before serving. Top with whipped cream or ice cream and sprinkle with powdered sugar if desired.
