Preparation

  1. 1

    Season the Roast

In a small bowl, combine kosher salt, black pepper, garlic powder, chopped fresh rosemary, and thyme. Rub the mixture all over the prime rib roast, ensuring an even coating.

  2. 2

    Let it Rest

Allow the seasoned prime rib to sit at room temperature for about 1 hour before cooking. This helps in even cooking.

Cooking

  1. 3

    Preheat the Oven

Preheat your oven to 450°F (232°C).

  2. 4

    Sear the Roast

In a large oven-safe skillet, heat the olive oil over medium-high heat. Once hot, add the prime rib roast, searing it on all sides until browned (about 3-4 minutes per side).

  3. 5

    Roasting

Once seared, transfer the skillet to the preheated oven. Roast for 15 minutes at 450°F, then reduce the temperature to 325°F (163°C). Continue roasting for approximately 1.5 to 2 hours, or until the internal temperature reaches 130°F (54°C) for medium rare.

  4. 6

    Add Broth

About 30 minutes before the roast is done, pour the beef broth into the skillet. This will help keep the roast moist and create a flavorful base for gravy.

  5. 7

    Rest the Roast

Once cooked to your desired doneness, remove the roast from the oven and let it rest for 20-30 minutes. This allows the juices to redistribute.

Serving

  1. 8

    Slice and Serve

After resting, slice the prime rib against the grain into thick slices and serve with the pan juices or your favorite sauce.
