Prepare the Chicken
Trim any excess fat from the chicken tenderloins and pat them dry with paper towels.

Set up Breading Station
In one bowl, combine the all-purpose flour, cornstarch, salt, black pepper, garlic powder, onion powder, and paprika. In another bowl, whisk together the eggs and buttermilk. Place the breadcrumbs in a third bowl.
Breading the Chicken

Bread the Chicken
Dredge each chicken tenderloin in the flour mixture, then dip it into the egg and buttermilk mixture, and finally coat it in breadcrumbs. Ensure each piece is fully coated.

Chill the Chicken
Place the breaded chicken strips on a baking sheet lined with parchment paper and refrigerate for at least 30 minutes to set the breading.
Frying the Chicken

Heat Oil
In a large, heavy-bottomed pot or deep fryer, heat vegetable oil to 350°F (175°C).

Fry the Chicken
Carefully add the chicken strips to the hot oil, frying in batches to avoid overcrowding. Fry for about 4-5 minutes or until they are golden brown and cooked through.

Drain and Serve
Using a slotted spoon, remove the chicken strips and drain them on paper towels. Serve immediately with your choice of dipping sauces.
