Preparing the Crispy Fried Calamari

Prepare the Calamari
Rinse the calamari rings under cold water and pat them dry with paper towels.

Make the Breading
In a large bowl, combine the all-purpose flour, cornstarch, salt, black pepper, paprika, and garlic powder. Mix well.

Soak in Buttermilk
Place the calamari rings in another bowl and pour the buttermilk over them. Let them soak for about 10 minutes.

Dredge the Calamari
Remove the calamari from the buttermilk and let the excess drip off. Dredge each ring in the flour mixture, ensuring they are well-coated. Shake off any excess flour.

Heat the Oil
In a deep pan or fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer for accuracy.

Fry the Calamari
Fry the calamari in batches for about 2-3 minutes or until they are golden brown and crispy. Avoid overcrowding the pan.

Drain and Serve
Remove the fried calamari with a slotted spoon and drain on paper towels. Serve immediately.
Making the Spicy Aioli

Combine Ingredients
In a small bowl, combine the mayonnaise, sriracha sauce, lemon juice, minced garlic, and a pinch of salt.

Mix Well
Stir the mixture until smooth and well-combined.

Chill
Refrigerate the aioli for at least 15 minutes before serving to allow the flavors to meld.
