Method

Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 425°F (220°C).

  2. 2

    Prepare Ramekins

Grease four 6-ounce ramekins with butter and lightly dust with flour, tapping out the excess flour.

Making the Cake Batter

  1. 3

    Melt Chocolate and Butter

In a microwave-safe bowl, combine the unsalted butter and semi-sweet chocolate. Microwave in 30-second intervals, stirring in between, until fully melted and smooth.

  2. 4

    Mix Sugar and Eggs

In a separate mixing bowl, whisk together the granulated sugar, large eggs, and large egg yolks until the mixture is pale and slightly thickened.

  3. 5

    Combine Mixtures

Gently fold the melted chocolate mixture into the egg mixture until well combined.

  4. 6

    Add Remaining Ingredients

Sift in the all-purpose flour, add the vanilla extract, and a pinch of salt. Gently fold until just combined; do not overmix.

Baking the Cakes

  1. 7

    Fill Ramekins

Evenly divide the batter among the prepared ramekins, filling each about 3/4 full.

  2. 8

    Bake

Place the ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes, until the edges are firm but the center is still soft.

  3. 9

    Cool Slightly

Remove from the oven and let the cakes cool for 1 minute.

Serving

  1. 10

    Invert and Serve

Carefully run a knife around the edges of each ramekin, then invert onto a plate. Serve immediately with a scoop of vanilla ice cream on top.
