Crust Preparation

Preheat the Oven
Preheat your oven to 325°F (160°C).

Prepare the Crust Mixture
In a medium bowl, combine graham cracker crumbs, granulated sugar, melted unsalted butter, and salt. Mix until well combined.

Form the Crust
Press the mixture firmly into the bottom of a 9-inch springform pan, spreading it evenly across the base.

Pre-bake the Crust
Bake the crust in the preheated oven for 10 minutes. Remove and let it cool while preparing the filling.
Filling Preparation

Mix the Cream Cheese
In a large mixing bowl, beat the cream cheese with an electric mixer on medium speed until smooth and creamy, about 2-3 minutes.

Add Sugar and Mix
Gradually add the granulated sugar and continue to beat until well incorporated.

Incorporate Sour Cream and Vanilla
Add sour cream and vanilla extract to the mixture. Beat until combined.

Add Eggs
Add the eggs one at a time, mixing on low speed after each addition until just combined. Be careful not to overmix.

Add Lemon Juice
Finally, add lemon juice and mix until smooth.

Pour Filling into Crust
Pour the cheesecake filling into the cooled crust, spreading it evenly.

Bake the Cheesecake
Bake in the oven for 50-60 minutes, or until the center is set but still slightly jiggly.

Cool and Chill
Turn off the oven, crack the oven door, and let the cheesecake cool in the oven for 1 hour. Then refrigerate for at least 4 hours, preferably overnight.
