Crust Preparation

Preheat the Oven
Preheat your oven to 325°F (160°C).

Mix Crust Ingredients
In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix until well combined and the mixture resembles wet sand.

Form the Crust
Press the crumb mixture firmly into the bottom of a 9-inch springform pan to create an even layer. Use the back of a measuring cup for a smooth finish.

Bake the Crust
Bake the crust in the preheated oven for about 10 minutes or until lightly golden. Remove from the oven and let it cool while you prepare the filling.

Beat the Cream Cheese
In a large mixing bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth and creamy, about 2-3 minutes.

Add Sugar and Sour Cream
Add the granulated sugar and sour cream to the cream cheese. Continue to mix until fully combined.

Add Flour
Gently fold in the all-purpose flour until just combined. Be careful not to overmix.

Pour Filling into Crust
Pour the cheesecake filling onto the cooled crust and smooth the top with a spatula.

Bake the Cheesecake
Bake in the oven for about 50-60 minutes or until the edges are set and the center has a slight jiggle.

Turn off the oven and leave the cheesecake inside for an hour to cool gradually. Then, refrigerate for at least 4 hours or overnight before slicing.

If using, wash and prepare the fresh berries, and whip the cream until soft peaks form.
