Preparing the Calamari

    Coat the Calamari

    In a large mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, black pepper, and paprika. Whisk together until well combined. Gradually add the ice-cold water to the dry ingredients, whisking until a smooth batter forms. Dip the cleaned squid rings into the batter, making sure they are well coated.

    Heat the Oil

    In a deep pan or fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). Use a thermometer to check the temperature for accuracy.

    Fry the Calamari

    Carefully add the coated squid rings to the hot oil in small batches, ensuring not to overcrowd the pan. Fry for about 2-3 minutes or until golden brown and crispy. Use a slotted spoon to remove the calamari and place them on a plate lined with paper towels to drain excess oil.

Preparing the Spicy Marinara Sauce

    Sauté the Garlic

    In a medium saucepan, heat the olive oil over medium heat. Add the minced garlic and crushed red pepper flakes, sautéing for about 1 minute or until fragrant.

    Simmer the Sauce

    Add the canned crushed tomatoes, dried oregano, and salt to the saucepan. Stir to combine and let the sauce simmer for about 15-20 minutes, stirring occasionally until it thickens slightly.

    Serve with Garnish

    Once the sauce is ready, remove it from the heat. Serve the fried calamari hot with the spicy marinara sauce on the side. Garnish with fresh chopped basil if desired.
