Method

Preparation

  1. 1

    Prepare the Brisket

Trim any excess fat from the brisket, leaving about a quarter-inch layer for flavor.

  2. 2

    Make the Rub

In a bowl, combine brown sugar, paprika, garlic powder, onion powder, black pepper, salt, and cayenne pepper. Mix well.

  3. 3

    Apply the Rub

Generously apply the rub all over the brisket. Wrap it in plastic wrap and refrigerate for at least 4 hours, preferably overnight.

Cooking

  1. 4

    Preheat the Smoker

Preheat your smoker to 225°F (107°C). Use wood chips like pecan or hickory for a smoky flavor.

  2. 5

    Smoke the Brisket

Place the brisket in the smoker, fat side up, and smoke for about 6-8 hours, or until it reaches an internal temperature of 195°F (90°C).

  3. 6

    Wrap the Brisket

Once the brisket reaches the desired temperature, wrap it in butcher paper or aluminum foil. Return it to the smoker and cook for an additional 2 hours.

  4. 7

    Cube the Brisket

Remove the brisket from the smoker and let it rest for 30 minutes. Cut it into 1-inch cubes.

  5. 8

    Sauce the Burnt Ends

Toss the cubed brisket with BBQ sauce in a large bowl until well coated.

Finishing

  1. 9

    Return to Smoker

Place the sauced cubes back onto the smoker for an additional 1-2 hours, allowing the sauce to caramelize and create a crust.

  2. 10

    Serve

Remove the burnt ends from the smoker and serve hot as an appetizer or main dish.
