Cake Preparation

Preheat the Oven
Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

Mix Dry Ingredients
In a large mixing bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt until evenly combined.

Combine Wet and Dry
Gradually add the wet ingredients to the dry mixture, stirring until combined.

Add Boiling Water
Carefully stir in the boiling water until smooth. The batter will be thin.

Bake the Cakes
Divide the batter evenly between the prepared pans. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.

Cool the Cakes
Remove from the oven and let the cakes cool in the pans for 10 minutes. Then transfer to a wire rack to cool completely.

Prepare the Cherries
If using fresh cherries, wash, pit, and slice them. If using canned cherries, drain excess liquid.

Mix Cherries with Sugar and Kirsch
In a bowl, combine the cherries, granulated sugar, and Kirsch. Let it sit for about 15 minutes to macerate.
Frosting Preparation

Whip the Cream
In a large bowl, beat the heavy cream until soft peaks form.

Add Sugar and Vanilla
Gradually add the powdered sugar and vanilla extract while continuing to beat until stiff peaks form.
Assembling the Cake

Layer the Cakes
Once the cakes are completely cool, place one layer on a serving plate. Spread half of the cherry mixture on top.

Add Frosting
Spread a layer of whipped cream frosting over the cherries. Place the second cake layer on top.

Top Layer and Decorate
Spread the remaining whipped cream frosting on top of the second layer. Garnish with chocolate shavings and any leftover cherries.
