Prepare the Pickled Pineapple
In a bowl, combine diced pineapple, rice vinegar, and a pinch of salt. Let it marinate in the refrigerator for at least 30 minutes.
Make the Soy Ginger Glaze
In a small saucepan, combine soy sauce, grated ginger, and honey. Bring to a simmer over medium heat and cook for 5 minutes until slightly thickened. Remove from heat.
Prepare the Salmon
Season the salmon fillets with salt and black pepper. Press sesame seeds onto the top side of each fillet.
Sear the Salmon
Heat olive oil in a large skillet over medium-high heat. Place the salmon fillets, sesame seed side down, into the skillet. Cook for 3-4 minutes until golden brown, then flip and cook for an additional 3-4 minutes until cooked through.
Serve
Plate the seared salmon with sautéed vegetables, drizzle with soy ginger glaze, and top with pickled pineapple.
