1. Prepare the Soy Glaze
In a small bowl, mix together the soy sauce and honey until well combined. Set aside.
2. Make the Spicy Mayo
In another bowl, combine mayonnaise and sriracha sauce. Adjust the amount of sriracha to taste for desired spiciness.
3. Season the Tuna
Pat the ahi tuna steaks dry with paper towels. Season both sides with salt and black pepper.
4. Sear the Tuna
Heat olive oil in a skillet over medium-high heat. Once hot, add the tuna steaks and sear for about 1-2 minutes on each side for rare, or longer to reach your desired doneness. Remove from heat and let rest for a minute.
5. Toast the Buns
While the tuna is resting, toast the brioche buns in the same skillet until golden brown.
6. Assemble the Sandwich
Spread a generous amount of spicy mayo on the bottom half of each brioche bun. Place a seared tuna steak on top, followed by a scoop of seaweed salad. Drizzle the soy glaze over the salad and sprinkle with sesame seeds and chopped green onions. Top with the other half of the bun.
7. Serve
