Prepare the Mushroom Ragout
In a large skillet, heat olive oil over medium heat. Add diced onion and sauté until translucent. Add minced garlic and cook for another minute. Stir in the chopped mushrooms and cook until they are browned and tender. Season with salt, black pepper, basil, and oregano. Set aside.
Cook the Meat
In the same skillet, add ground beef and pork. Cook over medium-high heat until browned and cooked through. Drain excess fat and mix in the marinara sauce. Let simmer for about 10 minutes.
Assemble the Lasagna
Preheat the oven to 375°F (190°C). In a large baking dish, spread a layer of meat sauce at the bottom. Place a layer of lasagna noodles on top, followed by a layer of mushroom ragout. Sprinkle with a layer of mozzarella cheese and a layer of parmesan cheese. Repeat the layers (meat sauce, noodles, ragout, mozzarella, and parmesan) until all ingredients are used, finishing with a layer of mozzarella and parmesan on top.
Bake the Lasagna
Cover the baking dish with aluminum foil and bake for 25 minutes. Then, remove the foil and bake for another 15 minutes, or until the cheese is bubbly and golden. Let it cool for about 10 minutes before serving.
