Cooking Mussels

    Prepare the Mussels

    Rinse the mussels under cold water, scrubbing the shells to remove any debris. Remove any beards and discard any mussels that are open and do not close when tapped.

    Sauté Aromatics

    In a large pot, melt the butter over medium heat. Add the minced garlic and chopped shallots, and sauté until translucent, about 3-4 minutes.

    Steam the Mussels

    Add the rinsed mussels to the pot along with the white wine and saffron threads. Cover and steam for about 5-7 minutes, or until the mussels have opened.

    Finish with Cream

    Stir in the heavy cream and chopped parsley. Cook for another 2 minutes, then remove from heat.

Making Pommes Frites

    Prepare Potatoes

    Peel and cut the russet potatoes into thin strips. Soak them in cold water for at least 30 minutes to remove excess starch.

    Fry Potatoes

    Heat the vegetable oil in a deep fryer or heavy pot to 350°F (175°C). Drain the potatoes and dry them thoroughly. Fry in batches until golden brown and crispy, about 3-5 minutes. Remove and drain on paper towels, then season with salt.

Making Aioli

    Combine Ingredients

    In a bowl, whisk together the minced garlic, egg yolk, Dijon mustard, and lemon juice.

    Emulsify

    Slowly drizzle in the olive oil while whisking continuously until the mixture thickens. Season with salt to taste.
