Crispy Skin Salmon

Prepare the Salmon
Heat the olive oil in a large skillet over medium-high heat. Season the salmon fillets with salt and black pepper. Once the oil is hot, place the salmon skin side down in the pan.

Cook the Salmon
Cook for about 5-6 minutes until the skin is crispy. Carefully flip the fillets and cook for an additional 3-4 minutes or until cooked through.

Cook Quinoa
Rinse the quinoa under cold water. In a pot, combine quinoa, water, and tomato water. Add salt and bring to a boil. Reduce heat, cover, and simmer for 15 minutes until the quinoa is fluffy.

In a blender, combine fresh basil leaves, olive oil, and salt. Blend until smooth. Strain through a fine mesh sieve to remove solids.
