Method

Cooking the Steak

    Prepare the Steak

    Preheat the grill to high heat. Rub the flat iron steak with olive oil, then season generously with salt, black pepper, and smoked paprika.

    Grill the Steak

    Grill the steak for about 4-5 minutes on each side for medium-rare, or until the desired doneness is achieved.

    Rest the Steak

    Remove the steak from the grill and let it rest for 5 minutes before slicing.

Making Bordelaise Butter

    Prepare the Sauce

    In a saucepan, combine red wine and shallots. Bring to a simmer and reduce until almost dry. Add veal demi-glace and thyme, and simmer for another 5 minutes.

    Finish the Butter

    Remove from heat and whisk in the unsalted butter until melted and well combined. Set aside.

Preparing Smashed Duck Fat Potatoes

    Cook the Potatoes

    Boil the Yukon Gold potatoes until fork-tender, about 15-20 minutes. Drain and let cool slightly.

    Smashed Potatoes

    Smash the potatoes gently with a fork, then drizzle with duck fat. Season with salt, pepper, and sprinkle chopped chives on top.

Making Sauce Verte

    Blend the Sauce

    In a food processor, combine parsley, basil, capers, garlic, and olive oil. Blend until smooth.

    Finish Sauce Verte

    Adjust seasoning with salt and pepper to taste. Set aside until ready to serve.
