Steak Preparation

    Prepare the Steak

    Rub the New York Strip Steak with olive oil, salt, and black pepper. Let it sit at room temperature for 30 minutes.

    Soak Wood Chips

    Soak mesquite wood chips in water for at least 30 minutes before grilling.

    Preheat Grill

    Preheat your grill to medium-high heat. Add the soaked wood chips to the grill for smoking.

    Grill the Steak

    Place the steak on the grill and cook for about 4-5 minutes per side for medium-rare, depending on thickness. Adjust time for desired doneness.

Sauce Béarnaise Preparation

    Combine Ingredients

    In a small saucepan, combine minced shallots, white wine vinegar, and white wine. Simmer until reduced by half. Strain and set aside.

    Prepare Sauce

    In a bowl, whisk together the egg yolks and the strained reduction until pale. Place the bowl over a pot of simmering water (double boiler) and whisk constantly.

    Add Butter

    Slowly drizzle in the melted butter while whisking continuously until the sauce thickens. Stir in chopped tarragon, salt, and pepper.

Pommes Frites Preparation

    Heat Oil

    In a large pot, heat vegetable oil to 350°F (175°C).

    Fry Potatoes

    Fry the cut potatoes in batches until golden brown and crispy, about 3-4 minutes. Remove and drain on paper towels.

    Season

    Season the fries with salt while they are still hot.
