Burger Assembly and Preparation

    Prepare the Beef Patties

    Form the ground beef into two equal patties, making a slight indentation in the center of each to prevent puffing during cooking.

    Cook the Patties

    Heat a skillet or grill over medium-high heat. Cook the patties for about 3-4 minutes on one side, then flip them and place a slice of Comté cheese on each patty. Cook for another 3-4 minutes until the cheese is melted and the patties are cooked to your desired doneness.

    Prepare the Hollandaise Sauce

    In a bowl, whisk together 2 egg yolks and 1 tablespoon of pickle brine. Slowly drizzle in 1/2 cup of melted butter while whisking continuously until the mixture thickens. Season with salt and pepper to taste.

    Assemble the Burger

    Toast the burger buns lightly. On the bottom half, place a beef patty with melted cheese, add a generous amount of house-made pickles, and drizzle with pickle brine hollandaise. Top with the other half of the bun.
