    Prepare the Duck

    Score the skin of the duck breasts in a crosshatch pattern. Season both sides with salt and black pepper.

    Cook the Duck

    Heat a cast iron skillet over medium heat. Place the duck breasts skin-side down in the skillet. Sear for 6-8 minutes until the skin is crispy. Flip and cook for an additional 4-5 minutes. Remove from skillet and let rest.

    Sauté Pancetta

    In the same skillet, add pancetta and cook until crispy. Remove and drain on paper towels.

    Sauté Swiss Chard

    Add olive oil to the skillet, then add the chopped Swiss chard. Sauté for 3-4 minutes until wilted. Season with salt and pepper.

    Make the Stone Fruit Sauce

    In a saucepan, combine chopped plums, minced ginger, chicken stock, and honey. Simmer for 10 minutes until thickened. Blend if desired for a smooth sauce.

    Plate and Serve

    Slice the duck breast and arrange on a plate. Add the sautéed Swiss chard, crispy pancetta, and drizzle with the stone fruit sauce. Serve immediately.
