    Prepare the crust

    Preheat the oven to 350°F (175°C). In a mixing bowl, combine graham cracker crumbs and melted unsalted butter. Mix until the crumbs are evenly coated. Press the mixture into the bottom of a 9-inch springform pan to form an even layer.

    Melt the white chocolate

    In a microwave-safe bowl, melt the white chocolate in 30-second increments, stirring between each, until smooth. Let it cool slightly.

    Make the cheesecake filling

    In a large mixing bowl, beat the cream cheese and sugar until smooth. Add the melted white chocolate and vanilla extract, mixing until well combined. Add the eggs one at a time, mixing well after each addition. Finally, mix in the sour cream until fully incorporated.

    Bake the cheesecake

    Pour the cheesecake filling over the prepared crust in the springform pan. Bake in the preheated oven for 45-50 minutes, or until the edges are set and the center is slightly jiggly.

    Cool and chill

    Turn off the oven and crack the door open, letting the cheesecake cool inside for about 1 hour. Then, refrigerate for at least 4 hours, or overnight, to firm up.

    Serve with berries

    Before serving, top the cheesecake with fresh spring berries of your choice (strawberries, blueberries, raspberries). Slice and serve with a 'say when' approach for perfect portions.
