    Cook the Filling

    In a large pot, add the chopped onion and minced garlic. Sauté over medium heat until the onion is translucent.

    Add the diced carrots and beef steak trimmings to the pot and cook until the beef is browned on all sides.

    Sprinkle the flour over the meat and vegetables, stirring to coat. Cook for 2 minutes.

    Pour in the stout beer and beef broth, add the thyme, bay leaf, salt, and pepper. Stir well.

    Bring to a boil, then reduce the heat and let it simmer for 30 minutes, or until the beef is tender.

    Prepare the Pie

    Preheat your oven to 200°C (400°F).

    Remove the bay leaf from the filling and pour the mixture into a pie dish.

    Cover the dish with pastry, sealing the edges. Cut slits in the top to allow steam to escape.

    Brush the pastry with an egg wash for a golden finish.

    Bake in the preheated oven for 25-30 minutes, or until the pastry is golden brown.
