1. Preparing the Steak

Remove the fillet steaks from the refrigerator and let them sit at room temperature for about 30 minutes before cooking.

2. Seasoning

Rub both sides of the fillets with olive oil, salt, and black pepper.

3. Cooking the Steak

Heat a cast-iron skillet over high heat until very hot. Place the fillets in the skillet and sear for 4-5 minutes on one side.

4. Flipping and Basting

Flip the fillets and add butter, garlic, and rosemary to the pan. Baste the fillets with the melted butter and cook for another 3-4 minutes for medium-rare.

5. Resting

Remove the fillets from the skillet and let them rest for 5 minutes before serving.
