Sticky Toffee Pudding
Method
Preparation Instructions
- 1
Prepare the Dates
In a bowl, combine the chopped dates and boiling water. Let it sit for about 15 minutes until the dates are soft.
- 2
Mix the Batter
In a mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
- 3
Combine Dry Ingredients
In another bowl, whisk together the flour, baking soda, and salt.
- 4
Combine Ingredients
Fold the dry ingredients into the wet mixture. Then, fold in the softened dates and any remaining liquid from the bowl.
- 5
Bake the Pudding
Preheat the oven to 180°C (350°F). Pour the batter into a greased baking dish and bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
- 6
Make the Toffee Sauce
In a saucepan, combine the heavy cream, light brown sugar, and unsalted butter. Cook over medium heat, stirring until the sugar dissolves and the sauce thickens slightly.
- 7
Serve
Once the pudding is baked, let it cool slightly before slicing. Serve warm with toffee sauce drizzled over the top and a scoop of vanilla ice cream.
