Prepare the Ribs
Remove the membrane from the back of the beef ribs. Rinse them under cold water and pat dry with paper towels.

Season the Ribs
In a small bowl, mix together salt, black pepper, garlic powder, onion powder, paprika, and brown sugar. Rub this spice mixture generously all over the ribs.

Let it Rest
Place the seasoned ribs on a baking sheet and let them sit at room temperature for about 30 minutes to allow the flavors to penetrate.

Prepare the Smoker
Preheat your smoker to 225°F (107°C) and add your choice of wood chips for flavor, such as hickory or apple wood.

Smoke the Ribs
Once the smoker is ready, place the ribs bone-side down on the grill grate. Smoke for about 5 hours, basting occasionally with a mixture of apple juice and liquid smoke.

The ribs are done when they are tender and the meat has pulled back from the bones. You can also check for an internal temperature of about 190°F (88°C).
