    Preparing the Prime Rib

    Take the prime rib roast out of the refrigerator and let it come to room temperature for about 1 hour.

    Seasoning

    Preheat your oven to 450°F (230°C). In a small bowl, mix together the kosher salt, black pepper, garlic powder, onion powder, and fresh rosemary. Rub the olive oil all over the prime rib roast, then coat it generously with the seasoning mixture.

    Roasting

    Place the seasoned prime rib in a roasting pan, bone-side down. Roast in the preheated oven for 20 minutes, then reduce the temperature to 325°F (160°C). Continue roasting for approximately 1.5 to 2 hours, or until the internal temperature reaches 130°F (54°C) for medium-rare.

    Resting

    Remove the prime rib from the oven and tent it with aluminum foil. Let it rest for at least 20 minutes before slicing to allow the juices to redistribute.

    Making the Au Jus

    While the meat rests, pour the beef broth and red wine (if using) into the roasting pan, scraping up any browned bits. Simmer for about 5-10 minutes on the stovetop to reduce slightly.

    Slice the prime rib against the grain and serve with the au jus on the side.
