    Prepare the Pork Belly

    Score the skin of the pork belly in a crisscross pattern, taking care not to cut into the meat.

    Season the Pork

    Rub the salt into the scored skin and meat, ensuring it penetrates well. Drizzle olive oil over the skin.

    Preheat the Oven

    Preheat your oven to 240°C (464°F).

    Roasting

    Place the pork belly in the oven and roast for 30 minutes at high temperature to start the crackling process.

    Lower the Temperature

    After 30 minutes, reduce the oven temperature to 180°C (356°F) and continue to roast for an additional 1 hour, or until the meat is tender.

    Final Crisping

    Increase the temperature back to 240°C (464°F) for the last 10-15 minutes to achieve the perfect crackling.

    Rest and Serve

    Remove the pork from the oven, let it rest for 10 minutes, then slice and serve with apple sauce.
