Prepare the Pork Belly
Preheat your oven to 300°F (150°C). Score the skin of the pork belly in a crosshatch pattern, being careful not to cut into the meat. Rub the pork belly all over with salt, black pepper, and garlic powder.

Roast the Pork Belly
Place the pork belly in a roasting pan, skin side up. Pour the apple cider vinegar around the pork belly into the pan. Roast in the oven for 2 to 2.5 hours, until the meat is tender and the skin is crispy.

Prepare the Apple Sauce
While the pork is roasting, peel, core, and chop the apples. In a saucepan, combine the chopped apples, water, brown sugar, and cinnamon. Bring to a boil, then reduce heat and simmer for about 20 minutes until the apples are soft. Mash the mixture to your desired consistency.

Glaze the Pork
In the last 30 minutes of roasting, brush the pork belly with honey to create a glaze. Return to the oven and continue roasting until the skin is bubbly and crispy.

Serve
Remove the pork belly from the oven and let it rest for 10 minutes before slicing. Serve with the apple sauce on the side.
