1. Prepare the Anchovy Dripping

In a small saucepan over low heat, combine the anchovy fillets, minced garlic, and olive oil. Stir gently until the anchovies dissolve and the mixture is well combined. Remove from heat and stir in lemon juice, chopped parsley, salt, and black pepper. Set aside.

2. Grill the Baby Gem

Preheat your grill or barbecue. Cut the baby gem lettuce heads in half lengthwise. Brush the cut sides lightly with olive oil and season with salt and pepper.

3. Barbecue the Lettuce

Place the baby gem halves cut side down on the grill. Grill for about 3-4 minutes until they are charred and slightly wilted. Flip them over and grill for an additional 2-3 minutes.

4. Serve

Remove the grilled baby gem from the grill and drizzle generously with the anchovy dripping mixture. Serve warm as a side dish or appetizer.
