Pork Loin Marinade
Method
Preparation and Cooking
- 1
Preparing the Pork Loin
Start by trimming any excess fat from the pork loin. This helps in better seasoning and aging.
- 2
Making the Marinade
In a bowl, combine kosher salt, black pepper, garlic powder, onion powder, dried rosemary, and dried thyme. Mix well.
- 3
Applying the Marinade
Rub the marinade all over the pork loin, ensuring it is evenly coated. Place the pork loin in a large resealable plastic bag.
- 4
Aging the Pork Loin
Seal the bag and place it in the refrigerator for 21 days. Turn the bag every few days to redistribute the marinade.
- 5
Cooking the Pork Loin
After 21 days, remove the pork loin from the refrigerator. Preheat your oven to 160°C (320°F).
- 6
Roasting
Place the pork loin in a roasting pan and drizzle with olive oil and apple cider vinegar. Roast for about 1.5 to 2 hours, or until the internal temperature reaches 65°C (150°F).
- 7
Resting and Serving
Let the pork loin rest for 15 minutes before slicing. Serve with your favorite sides.
