Preparation of Chicken

    Preheat the Oven

    Preheat your oven to 425°F (220°C).

    Prepare the Chicken

    Pat the whole chicken dry with paper towels. This helps to achieve crispy skin.

    Season the Chicken

    Rub the entire chicken with olive oil, then season generously with salt, black pepper, garlic powder, and paprika. Make sure to season inside the cavity as well.

    Add Aromatics

    Stuff the cavity of the chicken with fresh rosemary and lemon halves.

Vegetable Preparation

    Prepare the Vegetables

    In a large bowl, combine the chopped carrots, quartered potatoes, and onion. Drizzle with a little olive oil, salt, and pepper, then toss until evenly coated.

Cooking

    Roast the Chicken and Vegetables

    Place the chicken breast-side up in a roasting pan. Arrange the prepared vegetables around the chicken. Roast in the preheated oven for about 1 hour and 15 minutes, or until the internal temperature of the chicken reaches 165°F (75°C).

    Rest the Chicken

    Once cooked, remove the chicken from the oven and let it rest for 10-15 minutes before carving. This allows the juices to redistribute.
