Prepare the Carrots

Wash the carrots thoroughly under running water. Peel the outer layer of the carrots using a vegetable peeler. Cut the carrots into uniformly sized pieces, approximately 1 to 2 inches long for even cooking.

Cook the Carrots

In a large pot, add the chopped carrots and cover with water. Bring to a boil over medium-high heat. Once boiling, reduce heat to medium and simmer for about 5-7 minutes or until the carrots are tender but still slightly firm. Drain the carrots and set aside.

Prepare the Glaze

In the same pot, melt the butter over medium heat. Once melted, add the brown sugar, honey, salt, and black pepper. Stir continuously until the mixture is well combined and the sugar has dissolved, about 2-3 minutes.

Glaze the Carrots

Add the drained carrots back into the pot with the glaze. Toss the carrots gently in the glaze until fully coated. Cook for an additional 2-3 minutes, allowing the carrots to absorb the flavors of the glaze.

Serve

Remove the glazed carrots from heat and toss in fresh parsley before serving. Transfer to a serving dish and enjoy!
